The Final Part of a Long Day

September 23, 2010: The Break Out

The break out, as it has been called, is a process with no benefit until the morning.  The job of the breakout worker is to set up everything that I had to do earlier in the day for the bake off.  I'll just make this one a simple list...this is an average set up for the next morning:

Par-Baked Items:
Large French Bread - 30
Small French Bread - 44
Grinder Rolls - 220
European Rolls - 30
Portuguese Rolls - 30

Bagels:
Plain Bagels - 110
Everything Bagels - 30
Blueberry Bagels - 30
Egg Bagels - 15
Marble Bagels - 25
Asiago Bagels - 30
Wheat Bagels - 55
Sesame Bagels - 55

Pasteries:
Cinnamon Twists - 15
Cinnamon Buns - 10
Apple Turnovers - 48
Raspberry Turnovers - 48
Butter Croissants - 60
Chocolate Croissants - 24
Cheese Croissants -24
Apple Pockets - 12

Frozen Rolls and Breads:
Miami Onion Rolls - 60
Bagel Rolls - 36
Italian Bread - 90
French Sticks - 54
Scali Rolls - 32
Scali Bread - 44
Kaiser Rolls - 120
Seeded Kaiser Rolls - 24

Muffins:
Blueberry - 30
Double Dutch - 15
Pistachio - 15
Lemon - 15
Corn - 15
Mocha - 15
Banana Nut - 15
Cranberry Orange - 15
Butter Rum - 15
Cinnamon Chip - 15
Chocolate Chip - 30
Raisin Bran - 15
Low-Fat Bran - 15
Low-Fat Corn - 15
Low-Fat  Blueberry - 15

Altogether this process takes approximately four hours.  It is tedious in the fact that it is repetative motions for hours straight.  After this I must sweep and wash the floor and then call it an evening.  WHEW! Thankfully that day is over!

Thanks for reading...

Stay Sweet,
Lil' Buddy

  1. Nick just wanted to know that I think it is hysterical that you look so much like him. I never made the comparison before, but I think it is really funny. Btw please please please post some more blogs you have NONE for October.

  2. No Italian bread? I love the Stop & Shop Italian bread, though it can't be very healthy. And why do people love plain bagels so much? It's not like they're any less expensive than bagels that have scrumptious flavoring to them.

  3. Nick, you work for Stop and Shop?? Me too! What store? I work in customer service and I know how frustrating it can be. You are quite the baker...that's a lot of food!

  4. I would think that it would take longer to bake all that. Do you bake at home? Can you bake for me? just joking!!!!!!

  5. So you work at Stop & Shop?! We are rivals! I've worked at Shaws since I was 17 :/ The bakery looks like a better job than customer service though! Everything in your pictures looks delicious :)! You do look just like that guy which makes it completely ironic that you work in a bakery!!

  6. Brittany..sorry but Stop & Shop is better and cheaper. SHOP AT STOP & SHOP EVERYONE! ADD HOURS TO MY ALREADY RIDIC. SCHEDULE!

Matsuko noo I never bring my work home with me. It's like a teacher (my mom for example) once you get home it's a completely different world. She no longer wants to teach when she gets home...she just wants to lay out and watch South Park...odd? yes

Stef I work at Store 62 in Malden right by the train station; been working there for 5 years now and looking to get out as sooon as possible.

Mike Fridays Italian bread is only 99 cents! We at my store sell about 900 a week overall. It is our most popular bread. Good choice.

Lauren...I know haha I hear it all the time! The worst part is I have myself as "Cake Boss" on FaceBook and I have, as disgusting as it is, all these women sending me pictures of themselves asking what they can trade for me to make them a cake. Nasty.
